Yesterday it's hummus...
Today it's Mayonnaise Cake in a cup...
All my life my favorite cake.
Mom always made it for my birthday with No icing. This is a VERY moist cake.
2 servings in the cup
280 calories per serving (so don't eat the whole thing)
3 T all-purpose flour
3 T granulated sugar
2 T cocoa powder
1/4 t baking powder
3 T milk
3 T real mayonnaise
1/8 t vanilla
Mix dry ingredients in a 12 oz. micro-wave safe cup. Stir in remaining ingredients until blended smooth. Microwave at High 2 minutes. Let cool slightly. Top if desired.
I have modified the original recipe. It calls for a pinch of cinnamon, our family mayo cake does not and I do not care for it. It also calls for 3 T cocoa powder, which I think is overpowering for a cup of cake, so I cut it back to 2 T and it is perfect. The original recipe cook time is 1 minute on High. It depends on your microwave, when I cooked it for only a minute I could see it was too wet on the top. 2 minutes is perfect in my microwave. You may have to experiment for yourself. Throughout my life if I ever wanted to top it, I put a little smear of butter while it was still hot. You could use your favorite icing, whipped cream, caramel or ice cream. Maybe even a little dusting of powder sugar. You would have to figure your calories for topping, not my thing.
Now that I've discovered I can make it in a cup in the microwave, I am in heaven!
My Mother's Day gift to myself.
I'm going to mom's tomorrow to do landscaping, prune her Lilacs and dig Hostas for her Mother's Day.
I may just make her a Mayo Cake in a cup too.
