Today is national deviled egg day and tomorrow is national sandwich day. So sometime this weekend I should make egg salad sandwiches. They used to be my oldest son's favorite sandwich when he was a kid.


What does everyone mix in their deviled eggs? I don't use as much mayo as what's in the above picture..i don't like my eggs swimming in the stuff, just enough to hold the yolks together and keep it from being totally dry. I use avocado mayo, and like chives mixed in. I read online about sprinkling parmesan cheese over the top...never tried that before.
