Foods I want to try (again)

Here are some foods I'd like to try making. Some I've never made and others I haven't made in a long while:
Tuna Casserole (Skinny version)
Chocolate Peanut Butter Cups, homemade
Frozen Bananas dipped in chocolate and nuts *
Orange segments dipped in chocolate
Instant Pot chili
Homemade baked enchiladas/ tamales
Smoked Brisket
Cabbage, potatoes, and ham
"Healthy Chicken Vegetable Casserole" from Chef Meg
Baked fish with lemon
Omelets with arugula on the side
Homemade chow mien (with zucchini / squash noodles?)
Roasted squash / zucchini / pumpkin
Baked apples
Turkey burgers (oh, God, yes. Been too long)
Sweet Potato Curry (I wonder if I can make this in the Instant Pot)
Chicken in peanut sauce (I mean actual peanuts and not peanut butter!)
Grilled chicken with mango salsa
Stuffed Peppers
Meatloaf with mushrooms
Pureed soups
Soups in general!
Oven roasted broccoli
Oven roasted cauliflower with hot sauce (basically vegan hot wings)
Spinach, arugula, and/or other greens sautéed in olive oil and (fresh) garlic *
Overnight oats with chia seeds *
Cottage cheese and fruit (especially pineapple) *
Spinach smoothies, especially apple, ginger, and carrot
Homemade granola
Pot roast (with veggies, of course)

* Done/ made/ eaten

    I've learned to make s/f frappe's at my new job. I've made them in raspberry, chocolate and hazelnut they were fun to make and tasted real good.
