After a holiday weekend of over indulging on picnic foods that I don't eat in my regular meals, I am happy to say that the scale did not move up in pounds! So I am grateful it is the same as Friday. I soaked and slow cooked Rancho Gordo Eye of the Goat beans last night. Had a small bowl for breakfast, very tasty and filling. I'm new to Rancho Gordo beans, this is my first experience with them as they came highly recommended. I also bought the banana vinegar and the pineapple vinegar. I thought they would be sweet, but they really aren't. The pineapple is my favorite and I have been adding it to beans and chili. It gives a nice flavor in the background, very subtle. They would be great in salad dressings, but as I am so tired of salads currently, I haven't tried it. Every now and then I just can't face another salad.

After my study group tonight, when I get home if it isn't too late, I plan on making a veg loaf. I really miss meatloaf that my mom used to make. But as I am avoiding meat I am always on the search for a good veg loaf.

    well done you! It not easy when there is long weekends and holidays. I need to pop to shop and get new scales, we left the old ones in the old house! emoticon

    So happy that you are maintaining! Sometimes that's exactly what we need at the time. I will have to look for those vinegars. They sound interesting.
