A & I W2 -- Nat'l Eat Your Vegetables Day

For the A & I team we had a couple of choices for Blog assignments. I chose
"National Eat Your Vegetables Day is observed annually on June 17. How do you get more vegetables into your diet? What are your favorite or least favorite vegetables? Do you have any good vegetable recipes to share? "


Brussel sprouts, asparagus & broccoli are my absolute favorites! I just like to throw them in the oven and roast 'em, but they still have to have some crunch to them. I can't eat soggy 'floppy' vegetables! I don't like peas -- never have!

Adding broccoli to a salad is a great way to get additional vegetables, too! Veggies added to eggs, mashed potatoes or just in a bowl by themselves are delicious, too!

    I like broccoli and brussel sprouts by my tummy does not. Unfortunately, I have to avoid them. I try to get plenty of other veggies mixed in with my other foods or by themselves. I don't like overcooked "floppy" vegetables either! emoticon emoticon

    I love broccoli and Brussels spouts as well. Some times they don’t like me back though. I don’t like soggy either

    Great blog my friend! I love broccoli, but I do not like to eat asparagus at all. I don't like the smell or texture. It's crazy I steam it for my husband and spray I Can't Believe It's Not Butter on it and he loves it. I always toss myself a salad.

    Great blog. I love most veggies. Not fond of avocado and rhubarb though some count the first as a fat and the second as a fruit. I don't care for parsnips. I don't like veggies fixed certain ways - hate canned asparagus but love fresh. Hate frozen green beans but love fresh or canned. I love fresh spinach, don't like canned. Not a fan of canned tomatoes and really only like grape tomatoes. Not a fan of raw onions other than green ones.

    I think that was my biggest issue when I was a kid...mom would boil vegetables and they were like mush. As I got older and did my own cooking I started to cook veggies but kept them crunchy. Now I like them.
