Amaranth leaves- yum!

I am always excited to eat something I have not tried before. Husband picked this up from an Asian market. Amaranth leaves- delicious!
I sauteed in broth. Added garlic and 1T of tamari.
I am going to try Chinese Yams soon. -today
I am so happy to eat all these yummy foods!!!
Breakfast- Teff+ apples + soymilk+ cinnamon and a banana
Lunch- salad + carrot ginger soup+ Salad has beans and avocado+++ veggies etc=HUGE!!!
Supper- leftover amaranth + bok choy and aduki beans and serving brown rice + Chinese yam
