Sides are the Star

Every time I sit down to write up meals my head goes blank. I'll finally get a few down and then just move on to something else. Today I tackled the meal plan again thinking about fresh clean meals with no dairy (creamy sauces and cheese) and very little carbs (pasta, bread, pasta, and pasta--- we love pasta in this house). The first, and only, meal I came up with was eggplant parm (white dry cheeses are fine) with zucchini meatballs and a tomato cucumber salad (salt, pepper and evoo). A very yummy veggie dish. I came up with that meal around 2pm. Its now 830pm and it just hit me that I need to stop thinking about the protein as the star of the meal. The veggies should be the star. Just put together 2 or 3 veggie dishes and slap on a side of grilled chicken and there you go.

I still want to have some of my old dishes because they are just yummy.
-chicken with salt pepper and thyme in a mustard pineapple sauce served usually with rice and carrots.
-pecan crusted chicken with a mustard sauce served with mashed potatoes and green beans
-roasted red potatoes with honey mustard sauce (homemade)
..... Im seeing a mustard theme here....
Something I havent made in a long time that just came to mind is my baked chicken topped with a dijon mayo mixture and crushed up croutons and parm cheese. Please try this, its sooo good.

So anyways, tonight I plan to write up my sides but keep things simple like broccoli 5 different ways or something. Just found out our cat is a diabetic so money is now even tighter. About 20 minutes from us is this little country fresh store that has great deals on produce. When we go there the produce looks so yummy that I just want to eat veggies for days. Would like to start going there more often and stock up on the veggies. Make some soup, clean and cut them up to freeze.

Im glad my mind went this way of thinking about planning out meals. Do hate starting all of this during feasting season. I got 2 Thanksgivings and 2 X-mas. Going to watch the portions but it will be hard because of my famous cornbread stuffing. My grandma passed it down to me and it is sooooo good. ::drooling::
