What a Ride

The last five years have been difficult. I was diagnosed with Hashimoto and my weight started creeping up as I dealt with a super slow metabolism, brain fog and total lack of energy. Leaky gut is NO fun! My weight had crept back to 235 pounds and my doctor sent me to a ft clinic as I became pre-diabetic.

I am attending the clinic and fiercely sticking to the diet they gave me. I can eat pork and beef and bacon and eggs. I can eat nuts and peanutbutter and celery. I have to use butter and full-fat products, snack on Chicharones and cream cheese, eat lots of veggies and cheese....sound fun so far? I cannot eat grains of any kind, fruit, or anything with sugar, beans or even meat like chicken or turkey or fish unless I add avocado oil or walnut oil.

I love Mexican food as it is what I grew up on. Tacos and potatoes are GodÅ› gift to the food world BUT, I can not eat them! The good news is I do miss some foods but the payoff is superb. I started this diet the end of February and I have lost 67 pounds, I look good and I feel fantastic! I am riding and lifting weights daily...easy because I teach weight-lifting classes now! All is better on the home front.
