Learning to cook

I just started a 3 month vegan cooking course - today I'm working on knife skills. While I doubt that I'm ready to become 100% vegan, I'm hoping, by learning cooking and knife skills, I will learn how to make healthier food. I'm very excited to begin this journey!

    Learning new things in the kitchen for me is always enjoyable. I like to cook with fresh ingredients, and grow some of my own herbs to use in my cooking. I like to spend time reading cook books that are instructional in nature and talk about the science of cooking. Recently, I have picked up the Whole 30 cookbook....lots of great vegetarian recipes in there to try, and on my "to do" list during our Challenge.

    Barbara - I didn't quite understand Teresa's answer to your question, but I thought that 1/2 cup cooked veggies and 1 cup raw veggies was the rule of thumb. It is somewhere in SparkPeople.

    I have been vegetarian for 20 years and vegan for 18 of those. It is definitely a different mindset when you start. A little while after I became vegan I realized life was in danger of becoming one big endless stir-fry so I went looking for some vegan cookbooks. If you are interested in the names of some of my go to ones let me know. Have fun at your cooking class!
