Trying to stay on track

My weight loss program is still pretty much on track. We did eat out last week. My mother isn't able to get out much so we enjoyed eating what we wanted. I'm continuing to make a main noon meal and supper is around 300 calories.

I have weighed over 200 pounds for the last 15 years. Before that I had a year where I lost about 60 pounds after being over 200. I was so excited when I got on the scale Sunday and I was at 197 pounds!!!!! I never thought it could happen.

My copycat nutrisystem diet is really working for me. Here is one of the recipes I use.

Mini Pot Pies

1 pkg. refrigerated biscuits
1 can low fat cream soup
1 cup mixed vegetables
1/4 cup low fat cheese

Press each biscuit into cupcake tin and up sides. Mix ingredients and divide between cups. Bake at 350 degrees for 12 - 16 minutes or until golden. Approximately 100 calories per pie. Freezer friendly.

I am a vegetarian, but you can add anything to these. They tasted awesome and were quite filling!
