Just a little note to recognize a positive.....
Dinner last night was amazing! Cheese burger pie. - Now it doesn't sound to healthy but hey if you only have a little piece of the pie your good to go right?
So when making my cheese burger pie I thought I needed 2 pies because dang if I make casserole they eat the whole pan. So I thought 1 little 9" meat pie is not going to be enough. So I made 2. In the meat pie I chopped up crimini mushrooms to add a little something healthy, then my kiddo will never know she's eating something a little healthier.
Okay back to 1 or 2 pies.... I made the 2 pies, then I cut up some lettuce for mini salads by then I was exhausted.... BUT I threw some carrots in the oven to roast while I cooked the pie. I said... "How can I tell the family to eat healthy if I don't cook healthy foods?" Well each person had a piece of the pie, my husband had 2, they ate their salads, carrots.... and were like I'm full. I was like huh? Your full??? I made 2 pies. LOL My husband said "Well you filled us up with salad... Was that on purpose?" A light bulb went on... "Why yes" I said. I'm going to fill you up with your beloved appetizers is what I was thinking. They love an appetizer when we are out so why not at home. As long as it's healthy! Soup... Salad... Fruit... This could be time consuming but worth a try!
Tonight I'm making Mongolian beef. But I think I will start with some Egg drop soup. A cup before the meal will fill us up more and make it all healthier right?
I feel good today! Tuesday, not bloated, I feel pretty, I feel.... excited!
