I am thinking that healthy soups are the way to go for lunch at my desk the next several weeks of winter. What are your favorite healthy soup options? I'm planning a caramelized onion sweet potato soup creation soon!

    Lentil soup is virtually the same as the split pea. I love my black bean taco soup. Cook black beans for an hour or two until tender. I add a can of low sodium tomatoes, cumin, chili powder and salt to taste. I often start with onion and jalapeno, soften them and then add the beans. Let your spices simmer for half hour or more. Soups are a wonderful way to go for great health. emoticon I love almost all I have tried. Your creation sound good too! emoticon

    Pea soup is so easy to make and so good. I sauté onions, then put in the split peas, carrots and I use the brand "Kitchen Basics" for the chicken stock. In an hour or so it is ready. I make enough to last a few days.
