Lunches truck style

So as a full time passenger and wife I do most of the cooking. Hubby does grill when time allows and the crockpot is a huge time and life saver. I can set timers and let things go while we run down the road or while we sleep and then simply reheat in the electric skillet unless I'm super exhausted then I'll use the truck stop microwave to make clean up easier.
We make a lot of rice for red beans and rice or shrimp/ seafood fried rice or jambalaya, egg bake and marinara sauce for meatballs or Philly cheesesteak sandwiches or spaghetti. Or we slow cook chicken, pork or turkey in the crockpot and add mustard or BBQ sauce at the time we reheat what we want for that meal.
A typical lunch is
A couple cups of mixed greens with peppers, onion, tomato, cucumber and meat that was cooked in the slow cooker or smoked on the grill with mustard or BBQ. I put my meat on my salad and enjoy.
Sometimes we do fajita style chicken on flatouts with peppers, onions and mustard.
