Dinner Plan 10/16-10/22

Ok - I have been awful about planning this month and sticking to anything that I do plan so far. Back to it - Life gets in the way but it needs to not supersede cleaning out the freezer or making sure that I eat an actual meal this week (or any week for that matter).
Sunday: Punt/Fend for yourself or out
Monday: BBQ spiced chicken in the crockpot with Red Rice and veggies
Tuesday: Beef stroganoff over gluten free noodles with extra mushrooms, onions and green peas
Wednesday: Fend for yourself I'm thinking either breakfast for dinner or grabbing something at Chipotle as I have to shop for the potluck the next day but would rather eat at home.
Thursday: Either out or a quick chicken casserole with leftovers (My mom's birthday and I'm taking her to lunch so not sure what time I will be home plus it's October Baseball around here)
Friday: Gluten free pizza and salad before heading to the late night horror movie :)
Saturday: Out or pork chops with tomatoes and rice
This is what I know -
1. I need to buy some gluten free pasta if we don't have a take shelf at work anytime soon with some as I am almost out. This is a good thing.
2. Eating gluten free makes it not only hard to eat out at times but it also makes it more difficult to come up with some easy quick staples that don't require special ingredients.
3. I planned a week without a Mexican style dish - that is a big plus but I did say eat at Chipotle one day LOL.
