Bountiful Baskets

It's been awhile since my last blog.... I started going downhill again. But June has been a good month so far! I think I have finally got the sugar cravings out of my system. I have been tempted many times, but it is getting easier to say no. It doesn't feel so painful, lol. My clothes are starting to feel snug again... which is a GOOD thing, because they were feeling SUPER tight to the point I almost couldn't wear them. I'll take snug over suffocating, LOL! I am hoping by the end of the month they are somewhat comfortable. And I've lost weight, which is always motivating. I am down to 151.4 as of this morning. Been weighing every morning.... it's what I need to do right now.

One thing that is helping me so far this month is getting a bountiful basket each week. (Well, I've gotten 2 so far). It's a food Co-Op that puts together a random fruit and veggie basket together each week for only $18. It has been fun and challenging for me to find recipes to use these amazing fresh foods. I had parsnips for the first time ever! Cut them up into French fries seasoned with smoked paprika. Amazing! Daikon radish was a definite "no-go"... yuck! LOL! I am currently trying to find something to make using chili peppers and tomatillos.... Never cooked with those before. I have also been visiting the farmers market each week. I had no idea fresh eggs tasted so different than regular eggs. Oh and I got some blueberries this morning that are out of this world! I made a Paleo, coconut flour breakfast bread with them and it is cooling right now! I don't think I can wait for breakfast. I may have a light dinner and a slice of it for dessert.

    So glad you're enjoying cooking with fresh, healthy food! Some of those ingredients would definitely be a challenge!

    We have chickens and so enjoy the taste of the fresh eggs, as well as all our garden produce.
