Life on the road

Many know that we had to give up our adventure in Texas along with our dog a few short weeks ago. Since that time we've traveled out west and up and down the coast. In the past 2 weeks I've been from Minnesota through Iowa, Nebraska, Wyoming, Utah, Idaho, Nevada, California, Oregon and Washington and back through them again only to add Missouri, Illinois, Kentucky, Tennessee, Georgia and will end in Florida. From there we'll load in Georgia to head to New York.
So just how am I eating clean and staying active while living on the road you might ask. Well I'll tell you. We have a coffee pot, a small refrigerator with a little freezer, an electric skillet and a small nutri bullet for shakes or homemade ice crea, lol.
I make coffee each day. Then I make breakfast in the skillet, usually sausage or bacon with scrambled eggs seasoned with a little salt, pepper and tabasco. I like to add chopped veggies to mine. Usually red, green, yellow, orange peppers and onions. Then I clean it all up using disinfectant wipes, allow the pan, bowls, utensil to dry before putting them back in their cabinet.
Lunch we usually eat while on the move. For DH it is ham rolled with cheese and me it is a salad with 2 slices of ham torn up into it and half an avocado if I have any. I then clean up whatever was used and put it away again.
Dinner is often chicken, or pork chops. Sometimes red beans and rice or some other hot dish. I cook up a medium large package of meat all at once after we've parked for the night. The part not eaten is stored in the fridge to be used on salad or another dish later in the week. We have potatoes that often get pan fried in a little butter in the electric skilled. When I make red beans and rice, we use brown rice so I brown the sausage and onion; then remove it to add rice and water and after 20 min I add it back in to let it finish off for about another 25 min. From there is a trip into the truck stop to use the restroom and then clean up and bed.
DH is very supportive of my goal to workout daily so the alarm goes off about 30 minutes earlier then needed so I can run to the restroom and then come back to get in my workout. I set the laptop on the dash and workout as best I can, often modifying the move because of space. I work between the two seats usually sideways and then between the cabinets in front of the bunk and I use the bunk as needed too. Some moves are easy but others like push ups and ab work is a bit more challenge. Some truck stops have a fitness room and DH will play body guard while I workout in there or he'll sit outside while I do them outside.
It is challenging but it is run and motivating for me to be able to show people how you can live healthy on the road and get in your exercise. I'll be posting video of my space and workout modifications on facebook over the next few weeks, (first I need to workout the workout in the space I have).
