Hi guys! Sorry, I haven't been very active ... life has been very hectic to say the least! Memorial weekend was a blast! We went and camped in Bryce Canyon and ended up hiking it. I will post pics later. It was gorgeous!
I did however end up falling off plan and getting sucked into the lovely world of campfire marshmallows and smores. So, to date, I have fallen off plan 4 days. I am counting today as the 4th day because I ate too much and made poor decisions with what I ate. My first 3 meals of the day were provided at work during this workshop that I am attending and I suckered into all of it! I've got to have self control tomorrow!
Anyhow, I missed you guys very much and I can't wait to hear how all of you are doing!
Weight Watcher's CrockPot Ribs - I thought these were good but needed a little more salt. The hubby didn't care for them (he thinks most crockpot recipes are bland.) I also did not make the sauce to accompany, so that may have to do with my opinion!
This is half a yam with chicken chile verde from a place by my work called "Brixton's." Although it was spicier than I like, it was really good. I just steamed a bag of veggies from Wal-Mart and it was super filling!
