What's an "Easy" Workout? (Day 74 of 100)

I did an 'easy' workout today working my glutes and a little stretching. In 32 minutes, I only burned 125 calories.
But, yesterday's comments had me questioning what I've been doing. I know you are supposed to have 'easy' days and 'hard' days. But, I think that about 90% of my workouts are hard. I almost always push myself really hard. When I was running, I would run 3 days a week. But, during each run I was pushing myself pretty hard. So, maybe I need to learn how to do 'easy' workouts?
So, what's an 'easy' workout? What's an 'easy' run? If I can run at an 11:00 pace for 3 miles, is it running at a 12:00 pace? But then I'm worried that my body will get used to it.
If you have thoughts on what makes up an 'easy workout', I'd love to hear it! I think I need to find more balance.
