My husband cooks...

He is Filipino, and would have steamed white rice at every meal if possible. He cooks really good Filipino recipes, that are hard to turn down. Most of them have lots of veggies which is great. It's the rice that seems to be the culprit or so it seems. I need to start using my Spark People cookbook to vary my diet with good healthy foods.

    I'm at a stage right now where I'm frustrated with everything! And afraid of everything! I used to try to diversify the diet but my food choices are becoming fewer and fewer. Sister doesn't know how to handle the change. But...I'm losing and for me that's what makes the difference

    I have to watch the carbs too, as I am D2, and carbs mess with my sugar level. I guess people are different. I prefer the tast of brown or wild rice, but because I also have GP I have to eat the lower fiber refined kind so I limit it to small portions once in awhile. But I must admit I like a bit of rice with my stirfry. They seem made for each other.
    Is your DH open to a little trying of something new? Like maybe quinoa instead of rice? Remember its your choice too, just because he eats rice with it does not mean you have to. We are so programmed from out parents to not "waste" food that we find it difficult to not take something that is on the table. Just don't skip carbs completely.

    We've tried to use brown rice when possible - took a bit of getting used to but much healthier. emoticon

    The carbs are a battle for me because I love them.

    I've been replacing my rice with shredded cabbage (I buy the coleslaw mix--raw veggies, no dressing of any kind--from the produce aisle). I put the shredded cabbage on the bottom and spoon anything I would eat over rice on top of the cabbage. Sometimes if I'm really missing the rice I will put a very small amount of rice with the cabbage.
