Cabbage Casserole- eeeeeeeeeeeeeeeeeeea

I love this recipe- It's not a diet recipe but its not bad for you!

Cabbage Casserole

2lbs. Ground beef
1 medium head cabbage, chopped
1 onion, diced
1/2 C rice ( not instant)
2 Cans tomato soup
1 Can water
salt and pepper to taste
* optional cheese slices

Brown beef and onion. Drain. In a greased casserole dish, layer chopped cabbage, beef, rice and end with layer of cabbage. In a small bowl, combine soup, water and seasoing. Pour soup mixture over all ingredients. Cover and bake at 350degrees for 1.5 hours. Optional: Uncover last few minutes and add layer of cheese slices.

    One of my faves...I use pasta sauce instead of tomato soup and no cheese, though. It also works really well in the slow cooker.

    I absolutely love this recipe. Hmmmm....perhaps I will make some tonight and use Boca burger (vegetarian). It would be almost NO calories and lots of fiber. Thanks for the reminder of this delicious dinner.

    Thanks for the recipe! My boyfriend has been on a cabbage kick lately...I'll have to try this out!
