Salt Roasted Potatoes

I'm not the greatest cook, so I do have to refer to the web for recipes. Tonight I wanted to roast some potatoes. Instead of flavoring with butter, I will use fat-free gravy. I'll have a salad with light dressing. I've never heard of roasting potatoes this way. Just reading the amount of salt added made my blood pressure rise. They're in the oven now. I'll let you know how they turned out.

    I know a really yummy way to make roasted potatoes, you slice them into fat "Texas fries" then brush them with olive oil and sprinkle with pepper and rosemary, then bake them in the oven uncovered until crispy. My son makes them for me, they are so yummy and no salt.

    For what it's worth, it doesn't appear that the salt is part of the finished product... only the cooking process. I suspect it's just a way to crisp up the skin and transfer the heat (minimizing burning).

    I will be curious to learn more!
