Living alone and loving it - Goal to use all the amazing greens from the U-pick farm
I don't always tell the whole story. Yesterday's trip to the U-pick farm was really hard because I was fainting/falling the whole trip. The drive home was a series of pulling over drinking water - eating some carrots and resting. But with the help of some of my sparkfriends I got home.
Today I'm feeling a lot better. I decided to fix myself a great brunch after sleeping in. Here it is:
I used broccoli greens (but kale could be used - I personally am so in love with broccoli greens that i may plant some next year just for the greens). I cut out the tough stems.
Then slice stems into bite size pieces and put into pickle juice for a snack later - lower sodium option in rice vinegar and ginger.
I know I'm going into detail here, but this is a vegetable I never knew how to handle and I want to make it easy for you. Line up leaves and fold in half.
Roll up. Then I sliced ribbons of thin slices.
I then cut crosswise to make bit size pieces.
Being a good sparker and measuring!
Then over the top I put one tablespoon of balsamic vinegar, OJ in the concentrate form - 1 tablespoon ( but logged as 1/3 cup reconstituted), 1 4oz can of mushrooms - because I didn't have fresh. Mix this all together so greens soak in the flavor.
Then I took a tablespoon of the liquid from marinated artichokes and logged it as olive oil -- only this has so much more flavor - and heated it in bottom of pan. cracked in two eggs.
I sprinkled eggs with garlic powder and smoky paprika (so worth it to get this stuff!).
And assembled with some spears of fresh broccoli, a couple of strawberries for vitamin C so the mineral get absorbed better, Presented on a colorful plate and with flowers so that it feels Sparktastic!
