Living alone and loving it - goals - entertaining and staying on task and attending PT
So I was entertaining three guests for lunch today and needed to keep it good enough that I could eat with the group and still not blow the day.
I started my day with a good potion of baby carrots, so I'd be really full while cooking so I wouldn't snack as I cooked.
On small plate - several slices of fresh of the vine cucumbers, a small heap of garden lettuce, sprinkled with blueberries...on the side one of my grape leaves with a tad of goat cheese crumbles - this looked very pretty on the plate with the berries almost looking like grapes.
Lunch - Sautéed red onion and red peppers in a slice of hickory smoked bacon, then placed thin slices of turkey breast in with drizzle of balsamic vinegar and covered with Trader Joe's Southern green. Flipped these just in enough to start to wilt but keep their form.
Served with whole wheat naan
Dessert - in shot glasses made chocolate strawberry cheesecake....Took non fat cottage cheese mixed with cocoa powder and strawberries and whipped, at end added tiny bit of almond extract and dissolved gelatin. Spooned about 2 Tablespoons of this into shot glass, covered with diced strawberries and some shaved chocolate.
My day ended up being a just around 1,200 so very pleased.
I had my foot assessed at PT as the insurance company is wanting to do preauthorizations on this....so hopeful they are willing to help me out on this.
In the meantime got a really good exercise to increase the flexibility of my foot. You pick up marbles with your toes and move them. It is easy at first and gets harder as you go. So I definitely have my marbles today!!!
