LAALI: Chap 1.5&6: A month of healthy eating in pictures

Living alone and loving it: Yesterday didn't blog as it was a methotrexate day and I'll be honest most of it was spent sleeping. Today I got a surprise, which you will see at the end of the pictures. First, however, the happy news that I end the month at 6.5 pounds off...after a slow start. It meant really cutting back on calories. My goal was around 1,200 the reality was an average closer to 1,300....but it worked and here is what it looked like:
Home pickled grape leaves add wonderful flavor to a bowl of lettuce making it unnecessary to add dressing
Pre washed trays of vegetables allowed me to snack raw, or throw together things like this braised onion, kale and cauliflower stirfry sprinkled with soy sauce and sesame seeds
Turnips and beets were the base for this cold summer borst which used greek yogurt instead of sour cream
Even eating out was healthy by selecting salads flavorful enough without dressing - there was enough for a left over dinner salad
Then my surprise.....I'm taking care of some dogs - a Maltese and a Cockier Spaniel while their parents are moving. They are so sweet and already love my yard of birds and butterflies and pond (due to this they had a swim, got mucky and got a bath already).
Now that is a happy ending to the month.
