Any suggestions for quick meals?

I have a hard time with evening eating. I prepare my breakfast and lunch and eat it at work. In the evenings I am tired most times and don't want to spend a lot of time preparing dinner, so i tend to eat anything i can find, cookies, crackers, cheese, ice cream, oranges, raisins, toast, emoticon

Then afterwards i'm preparing food for the next day again. I really need help with managing my evening meal. Maybe I need help with my evening schedule. Sometimes I don't eat dinner at all, which i know isn't good either. emoticon

I've tried prepared meals, but they contain too much sodium.

Any suggestions on quick healthy meals?

    I had a friend that had this same issue, she would cook several meals on the weekends and put them into separate dishes and put them in the fridge and the rest in the freezer. She would then just come home and pop one in the oven or microwave and viola, good home cooked meals with no more than you put in them. Then after a couple of weeks she would have enough cooked for a good month of meals in the freezer as well. It worked for her!

    I depend on sweet potatoes to get me through those late afternoon hungry times.
    I scrub 5-6 mediums, microwave on a pie plate for 5-6 minutes, then finish off in the oven until VERY soft (and sweet).
    I eat one every day- COLD- with a sprinkle of cinnamon-sugar and sometimes even a squirt of whipped cream.
    Quick supper ideas?
    pork sirloin cutlets are cheap and cook way faster than chops,
    flank or flat-iron steak is a little more $ but lean and cooks fast
    my family likes Success Brown Rice (cooks in the bag in 10 minutes)
    we almost always have fresh broccoli- cooks in 5 in- plus one other veggies
    we go through baby carrots by the ton (find small good ones)
    I make a great Black Bean Sweet Potato Soup (takes 1/2 hour) , which we can eat 2 nights in a row and is grrrrrrrreat with corn muffins.

    How about a chinese chicken salad?? I throw a bag of romaine, mandarin oranges , pre-cooked chicken, a few chow mein noodles and a few almonds with reduced fat poppyseed and voila. I do the same thing with gortons frozen scampi grilled shrimp only I add some onions and peppers and light ranch. Some canned soups can be pretty tasty . I like Select harvest tomato garden. I also sometimes eat cereal for dinner.

    Breakfast for dinner! It is so fast and easy to fry up a couple eggs, make toast, and have a piece of fruit... Cereal is even faster ;)

    Prepared salad is fast too- then you can quickly grill or sautée chicken or shrimp for a meal. Overall, if you do some prep beforehand (like putting something in the crock pot or chopping up vegetables), dinner can be sped up a lot. Good luck!
