What to do, what to do

Monday, February 20, 2012

So I'm trying to decide on my externship for school and figure out a new routine. Weight is back up, same 10 I was down and nothing more which is good. Actually if weight nakes only maybe up 6 but either way its something I want down versus us.

Externinship: Great 5 star, upper scale restaurant. Set dessert menu, have to help with salads and appetizers if they cant backed up and we've got no desserts to assemble. Some creative license for new desserts, new ways to do things and ability to learn how to cost out a recipe for some real world experience.

Problem: current head pastry chef with 6 years industry experience is leaving, new chef only has 6 months experience - there and only there. She seems unsure of herself, even in teaching me how to assemble desserts she's been making for 6 months.

Decision: . . . . . . . . emailed 3 Chef's from school who's opinions I value, made a list of pro's and con's. . . accepting positions - its only for 3 months not the end of the world, I'd still have 2 days a week free from everything, can collaborate on new ideas - recipes, how to do things, etc.

Now on to exercise, weight loss, etc. . . .

I have put weights back into the equation but I am not sure if I should go more for toning with low weights and high reps or muscle building which will keep weight on upside with heavy weight and low reps.

I think I need to change the time of day I exercice and need to increase my cardio. Maybe take some morning runs since the weather is getting nicer and the sun is coming up sooner. OH DECISIONS, DECISIONS, somedays its too much!!!

your weight will eventually go down if you lift heavy. Muscle uses more calories just being there than fat. so weights in general are a good way to go. With that being said, the number on the scale is just that...a number. Muscle is much more leaner than fat, so go with building muscle. You could be the same weight as you are wearing a size much smaller size!!!
But I have read and noticed that nutrition is EVERYTHING!!! so as long as your eating is spot on, you will start dropping pounds. and with the weights you will start toning.

Good luck with your externship!!! It actually sounds like a great job!
