I've been home sick today, but if your house is like mine, that doesn't get you out of cooking, at least if you want to stay on your eating plan!
Anyway, at the grocery store yesterday, they had ground chicken on sale. I don't think I have ever used it before, ground turkey, yes, but not chicken. I went to SP recipes for some ideas, and saw one for making chicken meatloaf. I did modify the recipe some. One pound of ground chicken, 80 grams of oatmeal, 1 large egg, 32 grams of chopped onion, a teaspoon of poultry seasoning, and a half teaspoon of thyme. I divided the recipe into 4 portions and baked them in mini-loaf pans. My concern would be that it could be dry, so I baked for 35 minutes. They appear cooked through for that time, and seem moist. I won't eat mine until later, but cooked them since I have a son who is eating early tonight. I will let you know how well this went, and if the family approved.
I did go to Zumba class last night and it was awesome! I could tell that I had been away for a week, and I could feel the seafood platters that I consumed in Virginia, too! It was the first night of our 30 day Zumba challenge, and our instructor said she was going to intensify things, and she did! It looks like one of my friends is going to start attending with me. It's nice to have your friends join/support you on your/their journey!
Before I left on my trip, I had bought a case of toilet paper, thinking I'd have the bathroom well stocked for my men. When I got back, my DH informed me that the "new" toilet paper did not fit the holder. I said, " Why, all the double rolls have fit before?" He said, They were extra wide." Then he informed me that I had bought a case of paper towels! I will hear about that for some time, I imagine.
Hopefully, I feel like some strength training before the day is over. I have been on target for food and water today, so am happy about that.
