Chicken & Mushrooms in Tarragon Sauce

2 whole chicken breasts, skinned and boned
1 1/2 cups of sliced fresh mushrooms
2 tablespoons of cooking oil
1 cup of whipping cream
2 teaspoons of flour
1/4 teaspoon of salt
1/4 teaspoon of crushed dried tarragon
Chicken flavored Rice

Cut the chicken into 1 inch pieces. In a skillet cook and stir chicken and mushrooms in hot oil over medium high heat for 8 - 10 minutes or until tender. drain chicken and mushrooms, discarding pan juices, keep warm. stir together whipping cream and flour. In the same skillet, combine cream mixture, salt and tarragon. Cook and stir until thick and bubbly. Return chicken and mushrooms to skillet. Cook and stir until heated through. Serve over Chicken Flavored Rice. Makes 4 servings
