Running like the wind; Refueling with Pancakes

I've ran for the past two nights. I feel awesome! I've been getting to the whole 3 minutes most of the time. I did it for the first 4 rounds tonight, and only stopped once for each of the last few rounds. Riley kept right with me. The running actually helps with my sinuses. It forces my airways open. I don't know if it's just my new bright orange laces or the confidence that goes along with them, but I am feeling amazing.

I've found a recipe that makes me so happy. Protein Pancakes. They are really hearty, pretty easy to make, and fulfills the need for sweet without all the calories. I had them for breakfast yesterday and dinner tonight. I topped it with warmed up, smooshed up blue-, black-, and raspberries. All in all, it's less than 300 calories for 6 pancakes and topping.

Protein Pancakes
1/2 cup old fashioned oats
1/2 cup cottage cheese (I used fat-free)
1/2 cup liquid egg whites (2-3 whites if you're like me and don't buy the liquid stuff)
1/2 tsp. vanilla extract
1/2 tsp. baking powder
1/2 tsp. cinnamon and/or nutmeg
dash salt
Place ingredients in blender. Blend until smooth. Let batter rest for about 5 minutes (*helps make a fluffier pancake*). Heat large nonstick skillet over medium high heat. Coat with cooking spray, then using 1/4 cup measure, pour batter into skillet making pancakes about 4 inches in diameter. Cook until golden and flip.
Makes 6 pancakes.

    Awesome with the running! I just need a kick in the boo-tay to get my program going.

    The pancakes sound really good. I'll definately have to try them, especially with the daycare kiddos. They are pretty picky right now. Maybe put some applesauce, mashed banana or pureed sweet potato for a bit of sweetness. I also could eat what they eat for lunch.

    Nope. It's just the egg whites so no eggy taste, which in my experience comes from the yolk. Tastes similar to a traditional pancake; just a little less sweet, a little more dense. Though I'm pretty generous with that cinnamon. That non-stick spray is REALLY crucial though, even if you have non-stick pans. Without it, it might as well be super-glued to the pan.

    Hmmmmm.... I am a (ridiculously) picky eater.... but this sounds good to me! I think the only thing I don't have on hand is the cottage cheese, so it's low risk for me to give it a try!

    One question: you don't taste the egg in there do you? I really dislike eggs. I'm OK with them "hidden" in food though.
