Soup - Everything but the kitchen sink

When people hear that I follow a mostly (other than 1 meal a week) vegan diet, they often seem to think that I am deprived. Of course, those that have tasted my wife's cooking know differently. My journey has been so much easier and more pleasant because of her incredible cooking.
Here is the soup I've been enjoying this week. It tastes delicious and is chock-full of vegetables. She made a huge cauldron full of it, so I've had plenty around for a quick snack or meal. It's called Kitchen Soup, since she basically empties the kitchen of items that need to be used before they go bad.

Veggie Broth
Diced Tomatoes
Sweet Potatoes
Green Peas (frozen)
Zucchini
Garlic
Jalapenos
Celery
Carrots
Onion
Barley
Mixed Greens (spinach, mustard, collard)
Salt
Pepper
Oregano (dried)
Basil
Chives
Dill
Parsley
Cilantro
All the fresh herbs really give the soup a lot of flavor. Eating vegan and not in the least deprived.
