Healthy Cajun Food?

That sounds like an oxymoron. Most cajun food is based off of animal fat, flour and rice.
I however am so proud of my Red Beans and rice. It's just kidney beans (dried), water, spices, onion, garlic, bell pepper and turkey sausage. I chose turkey not just cause it was lower in fat, but also cheaper by a few cents. It smells so darn good right now and I just put the brown rice in the water. My cornbread probably isn't too healthy, but I haven't made it enough times to be comfortable tweaking the recipe. This is the first time I've actually used the slow cooker, so I'm anxious to try it. I am going to love this if it works out well.

I wonder how much else could be done healthier? What etouffee or creole? Any cajun ladies have a recipe? Gumbo - I don't think would be too hard to make healthy. Just cutting down on the meat and bulking up on the vegetables. Now to figure out what to eat it on. I usually do gumbo on top of potato salad. Eek.
Making healthy desserts is also going to be a hard one for me. Right now I'm just doing fruits and that's fine, but I know there is going to be a time that I need to actually bake something. I hate artificial sweeteners, so it's been a little tricky finding recipes I actually like. Time will tell though. For now Apples and cantaloupe it is.

I went for a short walk with both the dogs. That was kinda nerve-racking with having a 40 lb dog on one side and a 10 lb dog on the other. Both of them trying to go sniff stuff and getting excited whenever they see another dog. A few people thought it was funny. I got a good bicep workout from having to pick up Carpet (10lb shih tzu) so much. His little legs just can't take that much walking non stop./Every half a mile, he'd need a break for a few minutes. But both of them are now exercised and taking a nap on the couch while I'm getting dinner ready.
I'm going to focus on trying to balance trying to find a job as a full-time job and working out. I have to learn that skill some time, might as well start now. I went to the temp agency today and scored pretty well on the tests. Missed 2 out of 60 on the Microsoft Office and Excel test. 60 wpm and 8000 kph on 10 key. *fingers crossed*
