Brown Rice with Tomatoes & Avocados

This fits into both a vegetarian or vegan diet I perfer to use orgainic ingertients.

Ingredients
1 cup of basmati brown rice (dry)
2.5 cups of water
1 oz lemon juice
3 plum tomatoes, chopped into small cubes
2 avocados, skinned & pitted, chop into cubes



Directions
Pour water into pot and bring to boil.
Stir in rice, cover with lid & lower heat to a simmer.
Simmer for 35-40 or until all water is aborsed.
Remove form heat, let stand 5 mins.
While rice is standing, chop tomatoes & avocados into small cubes.
Add leomon juice to rice, then divided into three bowls. Top each bowl with tomatoes & avocados
