squash/onion/red pepper/eggplant/snap beans/

Makes 10 large servings

Vegetarian Meals | Side Dish | Vegetarian Meals Side Dish |

1/4 c olive oil
5c onion
4c red pepper
5c eggplant
5c snap beans
9c summer squash
1t salt

In extremely large heavy bottom pan heat the oil, add the onion and red pepper saute slowly until onion are transparent. Add green beans, eggplant and squash in that order. Put on a lid. low heat until done.

    YUM! Sounds like you are caramelizing the vegetables...I love that taste and use that cooking technique and my cast iron pan collection.

    Another good combination in the caramelizing arena is onion/shallots and fresh fruit added when the onions are almost done. I have used fresh pears, thinly sliced fresh apples. fresh figs, mango and I toss in some golden raisins, too. That combo forms a good "base" for all sorts of dishes that you create. I call them "What does Di have in her refrigerator and pantry" dishes.
