I don't want to cook anymore!

Once again I'm back at it, I've been tracking everything for the past two weeks and I'm trying to keep it up. My biggest difficulty is my nutrition. Working out is something I've grown to enjoy doing, and finding new activities has been great, but I just can't seem to motivate myself to keep up with the nutrition.

Yesterday I was within all my ranges, but today already I'm wishing I had a bag of goldfish crackers instead of having to cook another meal for myself. I think the main issue I'm having is the cooking, it's so hard to be motivated to make the mess and the effort for just myself. :(

    I have to agree with "Carminacg", batch cooking is a one stop way to get it done and frozen. I actually do double recipes so that I can get 6 to 8 servings out of the meals and freeze them. Then it's only 15-20 mins till it's on the table (I don't have a microwave so everything has to be heated up on the stove). When I am chopping veggies I do it for several meals at a time. And we always have a big salad ready to go. Hubby loves them for lunch with anything left over from the night before. And with your dietary issues (like me) I can't just buy the packaged frozen meals, it usually has something in it that will make me sick.

    It's so great that you are loving exercise! Keep that up. It's a wonderful lifestyle change that will stay with you.

    Remember: YOU ARE WORTH THE EFFORT! Would you do it for a friend if they needed it? Treat yourself as good as you would your best friend. Don't give up. We are rooting for you.

    A good idea might be to start Batch Cooking. That way you can prep and cook 3-4 servings at a time. That way your putting the effort in once and getting a few quick meals out of it. I do that with chili, stew, soup, pasta, fish, chicken, etc. I just BBQ up 4 chicken breasts and eat them a variety of differnt ways for the week. Same with 3-4 peices of fish baked in Lemon juice. Also I prep a large salad or slice up some veggies that I can steam quick or just reheat for sides. Just i figured one day that it takes the presure off at the end of the day. Also I have never had a problem with left overs so it works well! Good luck!

    It seems like you need to find some super quick and simple, yet delicious meals. I have some posted on my blog www.thevegetablelife.com or even google something like "15 minute dinner recipes" to get some easy ideas!

    Try one-pot wonders or simple meals! Don't let cooking overwhelm you, it doesn't have to be gourmet, just edible! You can do this!

    I'd send you meals if I could! I love cooking! I suggest printing recipes =) you can freeze left overs and have them later in the week or something. Hang in there!
