ZUCCHINI CRISPS

2 c. flour
2 c. sugar
1 1/2 c. butter
1 tsp. salt

FILLING:

6 to 8 c. peeled zucchini, sliced
2/3 c. lemon juice
1 c. sugar
1/4 tsp. nutmeg
1/2 tsp. cinnamon
1 tsp. apple spice

Mix together flour, sugar, butter, and salt to make crumbs. Reserve 2 1/2 cups and set aside. Press remaining in 9 x 13 inch pan and bake at 350 degrees for 10 minutes. Cook zucchini and lemon juice in large pan until tender. Then add 1 cup sugar, nutmeg, cinnamon, and apple spice. Bring to a boil, then add 1/2 cup reserved crumb mix. Pour zucchini mixture over pressed crumb mixture and then sprinkle remaining 2 cups crumbs on top. Bake at 350 degrees for 30 minutes. This tastes just like apple crisps and is delicious with whipped topping or scoop of vanilla ice cream.
