I don't want the calories from cooking in oil though so what I do is: Preheat over to 350*. Dredge in flour and season with salt and pepper. Spray pam on baking sheet. Then add the eggplant and spray with more pam or drizzle a little butter on top. Cook in preheated over for 10 min, flip, and cook for 10-15 more minutes. They still come out pretty crispy but a lot less fat and calories.
