Tomato Cakes

Ingredients
1 (14.5 ounce) can peeled and diced tomatoes with juice
1/4 onion, chopped
30 saltine crackers, crushed
1 pinch salt and pepper to taste
3 tablespoons vegetable oil

Directions
Place the tomatoes, onion and crackers into a large bowl. Season with salt and pepper, and mix thoroughly. Cover, and let stand for about 15 minutes. This will allow the crackers to soak up the juices from the tomato. The mixture should set up to be a stiff paste.
Heat oil in a large skillet over medium-high heat. Form the tomato mixture into patties, and place in the hot oil. Fry the patties, flipping only once, until golden on both sides.

    Another interesting recipe, Pearl! I wonder if it would be good with Triscuits, instead of the saltine crackers.

    Did you know some people are avoiding the cans of tomato products in favor of fresh ones and tomatoes in jars? It's because of BPA, Bisphenol-A, a chemical that they use in the plastic lining of the cans. It builds up in people's systems, and may be toxic to certain people. The tomatoes have a lot of acid naturally in them, so that's why some people are avoiding canned tomatoes, or canned soup that contains tomatoes. The acids in the tomatoes sometimes makes the BPA leach out into the food. Just giving you a head's up, in case you didn't know.
