Jeff helped me to get out of bed this morning so that I could go work out. I took too much time making healthy lunches/snacks for us, though, so I didn't leave in enough time to actually work out. I'm excited, though, because I've got oatmeal for breakfast, celery with peanutbutter and raisins, an apple, a banana, and an awesome sammich. He's got the same things plus some Apple Juice to chug down at lunch. He's really excited to start eating healthier.

I went to the grocery store last night and spent about $50 on veggies and a few staples I didn't know I was missing. I was so hungry by the time I was done that the regular old birthday cakes started looking appealing. I left before I hit "the danger zone" but that didn't stop me from calling Jeff and asking if he had thought about dinner. It was just after 7pm and it had been about 6 hrs since I had eaten and so I was considering take-out. I was staring at an Arby's with an option of Erbert and Gerberts (soup/subs) but Jeff said "How about we cook dinner together when you get home?"

Well, ladies (and gentleman?), it had been one of THOSE days and I was pretty grr-ish by the time I got home, lugged the groceries upstairs and put them in the kitchen. So, stressed + hungry does not a happy megan make.

Even so, Jeff gave me a big old hug and let me vent on him.. Then we talked about his day, my day, his day, my day then I got to show him all of the goodies I brought home from the store. By the time the chicken was in the pan, I was my normal happy cheerful self. (picture me with a bag of apples on my head looking for a banana so that I could be that latina advertisement with the fruit on her head, yeah.)

For dinner we cooked up some chicken bits, seasoned with "southwest" seasoning. I chopped up half of a large white onion and sauteed it in the pan with the chicken, Jeff chopped up some of the iceburg lettuce and I chopped up 1/2 a large beefsteak tomato... We had chicken burritos--whole wheat tortillas with chicken, onion, lettuce, tomato, banana peppers, pepperjack cheese, frank's red hot, and a smidgen of cheese whiz (from the jar). They were DELICIOUS--and filling.


In addition to the above, I also had:
1 c. golden puffs cereal
1/2 c. 1% milk
2 triscuit crackers
Austin Lemon OHs! cookies
Austin Peanutbutter Crackers
1 wheat wrap - grilled chicken breast (sm), 1 oz (slice) pepperjack, 1/4 c. green/red pepper, 1/4c. shredded carrots, 1/4c. banana peppers, 1/2 c. spinach, 1tsp Franks Red Hot, 3 Tomato slices
1 c. grapes
3 slice chocolate orange slices
1/2 ghirardeli chocolate square (72% Cacao, "Intense dark")

    It does make it so much easier to eat healthfully when you have some one else doing it too! That's awesome that Jeff was so supportive in doing that. Lately all Rich says when we're talking about for dinner is "How about eggrolls?" Luckily I've managed to shoot that idea down every time. I eat Chinese food about once every other month, and I've had my fill for a while!

    Oh my gosh, I Loooooove celery with peanutbutter and raisens. The ants go marching one by one¡K hurrah! Hurrah!

    I love when I have no motivation to cook, call up Mat to see if he wants take out, and he says ¡§How about we just cook something easy¡¨ (We meaning me of course, lol). Usually it¡¦s all the motivation I need to stick to a healthier plan, even if it ends up being spaghetti or grilled cheese/tomato soup.

    And I think you would make a great Chiquita Banana girl. Maybe a good Halloween costume for next year. ƒº Your dinner sounds delish and so much healthier than my ¡§I got home really late and am starving¡¨ meals.

    So sorry about the stressful day. I'm glad that you made it end on a positive note though! That's great that Jeff wants to eat healthier too and that you guys cooked together! :) Love it! And your healthy dinner sounds delish!
