Acorn Squash on a Chilly Night

Don't know what happened but it's chilly here north of Houston. Got down to 40 last night. DH and I are loving the temperatures...leaving the windows open all night. Jolie isn't as fond of the cooler air (she has started sleeping under the bed).
I baked an acorn squash tonight. Why do the only recipes for acorn squash (that I can find) call for butter and brown sugar? Still pretty good. DH won't try it so I get to take the other half for lunch tomorrow.
Most of the winter squash recipes call for brown sugar. Anybody got any recipes without sugar?
