I am roasting peppers on my stove top...

All's I do is just put the chili's((My favorite is the pictured poblano chili)) on the open fire and turn them and char their waxy skins black,

Then put them in a bowl with a lid or cover with a plate,let them self steam in the covered bowl for 10 to 15 min,then run them under cold water and rub the burnt skins off...cut open and take the seeds out and cut into strips or chop into pieces,then add with onion and eggs,((I throw 2 whole egg's yoke and all in with 9 whites)) after chili and onion egg mixture cooks,turn off fire,....Then throw a cup of sliced or shredded mozzarella cheese and 1/4 cup of sharp cheddar cheese, put it on top of egg mixture and cover,let sit till cheese melts,((5 to 8 min)) It's low in calories and carbs.and fat....It's one of of my fav's on my,"" something to heat up"" and is so tasty...I have a serving of that with a heated corn tortilla or 2....So Yummy. And they store and freeze well too!
