Ok a few things...
1st, my Mom got her Mother's Day Flowers today! I was worried about sending them tomorrow. Ya never know if they'll actually make it on such a crazy flower-delivery day. Worked out well. She loved them! The arrangement is called 'Monet's Garden.' Totally perfect for her.
Second, I wanted to share my dinner y'all! I won't let you forget that I'm moving. I leave next Thursday, so in the meanwhile I'm sleeping on an air mattress and trying to clean my apt as much as possible. (Gotta get my deposit back!) Part of the process is using up as much as I can from my pantry/freezer. I can't take it with me, and I don't want to throw it out. Here's what I ended up making tonight:
Some veggies & dip. I use Naturally Fresh Light Ranch. Always a personal fav.
Wild Rice Casserole. Had all the stuff to make it! I wasn't paying attention at the g'store and bought Italian seasoned ground turkey. No harm, no foul. It was still yummy. I just didn't add any seasonings to the mix. (The recipe at the bottom is with plain ground turkey.) I usually put some fresh mushrooms in it too, but used them up last week. Not gonna lie, the sodium is a bit high. I think if you make the rice from scratch with low sodium chicken broth, it'll bring those numbers down a lot. I just didn't have the time or the patience for that noise. I used 2 bags of Long Grain & Wild and 1 bag of Brown Rice. You can reverse it, or use all of one or the other and it will be just as good. It might not look so appealing in the pic, but it's the ultimate comfort food. Warm, yummy, & (seemingly) indulgent.
Wild Rice Casserole:
2 Bags Uncle Ben's 90 Second Long Grain & Wild Rice (4 Cups total)
1 Bag Uncle Ben's 90 Second Brown Rice (2 Cups)
1 lb Ground Turkey (91% or 93% lean)
1 Can Cream of Celery Soup (The Healthy Select version)
1/2 Cup Light Sour Cream
1.5 Cups of Mushrooms, sliced
1 Stalk Celery, cut to preference (the bigger, the crunchier the end result)
Garlic Powder, Onion Powder, Pepper to taste
Preheat your oven to 400 degrees.
Spray bottom of a pan with Pam. Add turkey and brown.
Add mushrooms and celery. Sauté a bit.
Lightly season with garlic & onion powder and pepper to taste. (The rice has a lot of salt, so you don't need to add any.)
Microwave the rice, each for 90 seconds
Spray your casserole dish with Pam
Add rice, turkey & veggie mixture to the dish (yeah mix everything in the same dish. make it easy on yourself)
Mix in soup and sour cream (Don't dilute the soup!)
Bake for 30 minutes.
