Trying to be meatless and low carb!

My hubz is going animal protein free fr 6 weeks per Dr's orders. Ok not really a big deal since I have done this before. The trick is getting him to eat the things he needs too. My vegetable stir fry over brown rice got a smirk and a "You're trying to starve me" comment.
I have no problem replacing meat protein with nuts, cottage cheese, greek yogurt and eggs. He just isn't content with that.
So I spent a good portion of yesterday looking for recipes without meat (we don't eat fish or seafood either). I was able to come up with a lot of pasta dishes and bean dishes. The next task is using these recipes is switching him to an all wheat mentality.
I have to keep reminding him that it's always easier to be bad vs being good. And since we're both not wimps or quitters we can face the good!

    I hear you, good luck. I think if someone told my hubs that he couldn't have animal protein for any amount of time two things would come out of his mouth: first "what do you mean animal protein" (he's not the sharpest tool in the box) then second, a resounding f you. So I know how tough this could be.

    sounds rough, I am wishing you luck. I don't eat anything from the ocean/water either. but I truthfully could never go with out meat. It is my staple. good luck for sure.

    oh, oh. i feel so bad for you. my hubby and kids wont eat any veggies. they will literally not eat. so i know how hard it will be to get him to change. i wish the best of luck.

    You can do sneaky things like gradually add in wheat to otherwise white dishes. Sneak in some veggies without telling him (in dishes where he won't be able to tell like baked goods!). Good luck! I'm sure he'll come around! Especially once he realizes how much better he feels eating good food!!!

    I make mac and cheese using whole wheat pasta, 3 wedges light laughing cow cheese and a bag of brocolli and cheese, tasty and even my father will eat it

    I have eaten this way since I was in my teens. Once he tries he will begin to like the fresh clean taste of the foods. Keep trying.
