Oriental Stir Fry...see pic; I ate this for lunch....

Doesn't this look good?
Well, it WAS good... cause I ate it today for lunch!! 264 Calories, 18 carbs, 6 Fat, 30 Protein.

I love when people share food blogs.... so thought I would do one today since it looked so pretty.

It was SIMPLE, LOW CALORIE (264 total) and Delicious! If you left off the teaspoon of olive oil I used to stir fry the chicken (maybe use Pam spray instead) then you could save 40 calories and 5 grams fat. Olive oil is a good fat so I use it.

There are 2 cups of vegetables w/sauce and 4 ozs chicken.
Total calories for the plate of food you see above is 264. I could of had rice but this was too much food already and I would rather get my veggies I need to eat today done first.

The vegetables include: Broccoli, Sugar Snap Peas, Carrots, Water Chestnuts, Peppers, Mushrooms, Baby Corn

I used the "BIRDS EYE ORIENTAL STIR FRY" Frozen vegetables from Wal Mart Super Center.
There are 17 (1 cup servings) in the big bag and a couple of little bags of "frozen stirfry sauce".

I stir fried 1 chicken breast in 1 tsp of olive oil. I cut it up in bite size pieces. The weight after it was cooked was 4 ozs.

I cooked 1/2 a bag of the vegetables in the stir fry pan but did not add anymore oil.
I added about 1/4 of a package of the sauce that was provided.

So honestly this has even less calories because the calculations on the back include the sauce so that 1 cup of finished veg. and sauce equals 50 calores, 9 carbs, and 2 protein.

I will definitely make this again....

Maybe it is an easy idea for some of you guys PLUS it is one of those meals that the WHOLE FAMILY can eat... and that is perfect for me since there are 4 of us.

    I have made similar and the family loves it ... so it is a win-win. I have taken frozen stir fry veggies and used several different types of stir fry sauces ... usually found in the oriental food section of grocery store. My hubby made a stir fry once that was absolutely delicious. Schzeuan (sp?) sauce, shrimp, frozen veggies, waterchestnuts, and pineapple.

    As far as the sodium... I am estimating about 100-150 because I used way less than a 1/4 of the sauce pack.

    IF I had used exactly 1/4 of the packet then here are my calculations:
    the whole packet of sauce does 8 servings of 1 cup of veggies each serving. The whole packet of sauce has 2400 total of sodium. BUT

    I only used 1/4 so 1/4 of 2400 is 600 total.
    Then 600 divided among 8 servings 75 grams sodium each serving
    I HAD 2 servings so I had 150 grams total of sodium.

    But less than this because I used even less than 1/4 of the packet... I only wanted a "touch" of the flavoring of the sauce and just like you I am watching sodium and keeping it to 1800 to 2000 grams a day on most days.

    Looks great. We love stir fry. How was the sodium? I'm finding myself having way, way, way too much of that.
