Pumpkin Spice Latte...yum.

So even though I live in China and we have Starbucks...it's not a legit Starbucks in my opinion because they don't have yummy drinks such as Pumpkin Spice Latte...So I went on the hunt for a recipe that I could make myself...I found a yummy one and tweaked it to be diet friendly...here's the modified recipe: (it was so yum!)

This is for 2 servings:

2c Skim Milk
2tbsp canned pumpkin
2tbsp splenda (can add more or less to taste)
2tbps vanilla extract
1/2tsp pumpkin pie spice
1c strong brewed coffee

In a saucepan combine milk, pumpkin and splenda and cook on medium heat, stirring, until steaming. Remove from heat, stir in vanilla and spice, transfer to a blender and process for 15 seconds until foamy. If you don't have a blender, just whisk the mixture really well with a wire whisk.

Pour into 2 mugs and add coffee on top.

Optional: top with whipped cream (not included in nutrition information)

fat - 0.5g
carbs - 18.1g
protein - 8.7g

    Oh man, this sounds so good! The only problem I have is I think the rest of the canned pumpkin I have in my fridge isn't any good anymore emoticon I'll have to give it a try the next time I have some on hand!
