Made 2 "scrambled egg" and tomato sandwichs, my old go to breakfast choice. It was amazing! Not quite as eggy (of course lol) but it tasted so similar that I am quite satisfied with it. Just wanted to share the crazy differences. Have a blessed day!See this image largerSee this image largerFirst attempt at "BBQ wings" aka BBQ cauliflower. They smell good but I can see they ain't wings lol. Waiting for them to cool down to see how they taste. Can't believe a whole head made two pans of them. And only about 700 calories for all of them. So if it's about 8 servings that would be only 88 calories lol. Nice little snack with some home made ranch & celerySee this image largerMy cauliflower BBQ wings at 200 calories for this many wings. Went alittle crazy and made some ranch (that's not that great for me). I'm sure I won't eat all of it but I felt like splurging alittle today. Total for my meal is 449 calories. The wings were really tastey. But I will say the texture is something to get used to lol. I've never been a fan of cauliflower but I would perhaps make this againSee this image larger"Chick'n" ranch wraps for dinner! Made my own ranch, and the chicken is the Daiya brand fake chick'n tenders. So delicious and only 300 calories for both wraps. #veganfoodsSee this image largerThe sweat is pouring this morning! Couldn't get my Runkeeper app to work right so just ran when I caught my breath. Sadly even though I ran more, I walked in between slower lol. So my minutes per mile were about the same. Feel good about my run though! I really tried. May not sound like much but I managed to run for 1min 45sec straight. For me never being a running type of person I'm happy about it. Hope everyone has a blessed day!(1 comments)See this image largerMade some cookies this morning. Had to tweak it a bit cause I did not have powdered sugar or almond extract. Also didn't put the icing on it, instead put one dairy free chocolate chip! They came out amazing. Really hit the spot for that sweet tooth I've been battling lately. They are about the size of an Oreo and only 40 calories per cookie. Toss in a bit of water and the spinach in a frying pan, once wilted throw the mixture from the blender in with it and stir around till it thickens. May look ugly but it's amazingSee this image largerBought me some new running tanks a few days ago. Size LARGE! :D decided it was time to actually use them (I've been a lazy butt my whole vacation so far running wise). Needless to say I'm feeling this 100 degree weather (it's only 80, I'm just a wimp haha) had to burn off at least alittle of the soda I had yesterday. Time for the pool!See this image largerBreakfast tacos! Haven't had tacos since the beginning of the year. Was craving them like crazy! Only 100 calories a taco. I'm in heaven. Never thought I would be here now. From 240 to now 161 as of yesterday. All thanks to portion sizes and healthy Whole Foods. This is lunch before work. With a half serving of so delicious dairy free salted Caramel cluster. Total of 290 calories of deliciousness #deliciousdailymomentSee this image largerI can't make crispy sweet potato fries in the oven to save my life. I practically burnt the things this time out of frustration and they are still like limp noodles! I toss with olive oil and seasonings and bake for about 10-15 minutes on each side at 400-475 (I've been trying different temps) but they just aren't crispy! Any body have any advice? I don't claim to know how to cook very well, so I don't doubt if I'm doing it totally wrong. LolSee this image largerLunch before work! Tofu "egg salad" wraps with tomato and lettuce, black seedless grapes, pretzel twists, and strawberries. 292 calories of deliciousness! #deliciousdailymomentSee this image largerWell it finally happened. It feels like it's taken me forever to get under 160 but there it is! It's bittersweet. I know it's cause I haven't ate in almost 24 hours (I got tons cooking as we speak, just had to work overtime at work, forgot my lunch, then came home and crashed). So as soon as I get some food and water in me it'll go back up. But it was such a treat to see this!See this image largerGetting closer to my goal! Saw someone post about this quite a while back and decided to do one myself. Wish I could remember who it was but if it was you thank you!! It really helps keep up that motivation seeing it in a visual way. Can't wait to have it all filled in! Down 82 lbs, 38 more to go!(2 comments)See this image largerMy fiancé told me yesterday how he thinks I look so different than I used to. I have to admit I do see a lot of differences since loosing weight. I HAVE CHEEK BONES!?! Lol :) and only one chin now! Yay! It's amazing looking at before and after pictures. After I eat I will be taking the dogs on a walk! #determinedSee this image largerNot the best dinner. But guess if we gonna have a junk food night, might as well do it up with some good stuff. Took a cheeze lovers daiya pizza, threw some pickles, banana peppers, spinach, and tomatoes on it. Then threw the extra cheese that came off it in the package back on top. About 400 calories for 1/3 of the pizza.See this image largerI know. It looks gross. BUT! This is delicious!! It’s got 24g of protein in it! Had some bananas that were very ripe (not gonna make it another day or two) so I mashed it up with a scoop of the Vega cold brew coffee protein powder.... it is delicious! Especially when I have a bit of a sweet tooth. The banana made it extra sweet. #dessert
