Dinner for 4 people. Easy. Crispy chicken thigh Chicken thighs (Started on the stove top) assorted veggies and quartered Yukon golds. Drizzle olive oil on the veggies and potatoes and roast all together in a big parchment lined cookie sheet bake 400 for 30 minutes. I get a serving of everything but the potatoes. This time I topped the chicken with a sauce made from shallots mushrooms capers lemon chicken broth reduction. Took about 30 minutes to make3 two miles walk today. One in my neighborhood, one at the gym to beat the 100^ heat, and one with my brother after dark at a wildlife preserve. Beautiful day!Company over for dinner. BBQ salmon, fresh mozzarella tomatoes and basil, garlic and lemon green beans, whole grain rice and cantaloupe and blueberries. Played cards and went for a 3 mile walk in the wilds at dusk.Dinner for three plus leftovers for lunch tomorrow. Pork roast, green beans,fresh toms, Coke’s, and avocados, roasted sweet potato medallions.
