So glad you asked! Yes, you can! Does it taste good? Oh, hell yeah! So what’s the trick? Chickpea flour. When whisked with a plant based milk, it gets custard-like. Use some good-for-you bread, and fry in vegan butter or coconut oil, and you got yourself a delicious plant-based breakfast!Chili Mac and Cheeze, but I used Aldi’s plant-based Queso rather than make my own.

I tried to lose weight so many times and failed. So what made this time different? Learning that if you fall off the wagon, you don’t have to give up. I would start off great, going in 110%, and feel deprived, so I would give in to cravings, and then just give up! But dust yourself off, and keep going!! I’m not special. I just hung in there. Had this for lunch today. Like a bowl full of healthy yum! Roasted sweet potatoes with rosemary, chickpeas, shallots and maple walnuts. On a bed of greens and quinoa. You can choose a dressing, so I opted for honey mustard.

Apparently, butternut squash noodles break into pieces once they cook. But regardless of how it looks, this recipe was fantastic.

But now I work right next to it on Sundays, so I packed a change of clothes and hit the paths today. OMG!! Like instant therapy!! How I love running outdoors!! 3 oz unsweetened almond milk
1/2 c rolled oats
1/4 cup chopped dates
1/2 banana, sliced
2 TB toasted unsweetened coconut.
Mix together in a bowl and let sit for 15 minutes.
Delicious!Took my daughter to the Fruit & Spice Park today. Got extra steps in and enjoyed the quality time with her.

I was about 26 in the top left. My diet was horrible. I never exercised. Now I can’t imagine giving up physical activity. More than 2 decades later, I am so much healthier. It was a long process to get here, learning what works for me and what doesn’t. But I never gave up, even after a 2 year plateau. Keep pushing! Just want to tell you guys to surround yourself with people that lift you up, that support you and your goals. You’ll always have that one person that tries hard to bring you down. It’s their own insecurities. Just block it out and do you! No one should EVER stop you from wanting to be healthy and happy if they care about you. Be patient, and consistent and your body will respond. #TransformationTuesdayEver look in the mirror and see all the flaws? Everything you hate, and if you could “change one thing?” I think we all do. Creatures of habit. But if you’re on here, and you’re trying, then you ARE changing. Sometimes it’s not as fast as we’d like. But start focusing on those parts of you that you like! We can hate our bodies or appreciate them for what they are capable of doing! Just get out there, and keep pushing!! ❤️Call me Queen of the Chickpea. Here are some ranch roasted chickpeas I made in the air fryer. Drain your beans (save that aquafaba), dry them on paper towels, drizzle in 1 T of olive oil, and coat with some ranch seasoning. I used a half a packet. Then roast at 360 for 12 minutes, shaking half way thru.Dinner tonight...creamy vegan corn chowder. Added a lot more veggies than the recipe called for, including red bell pepper, celery and shredded carrots.

One thing no one tells you when you start your journey is that maintenance in HARD! It’s easy to lose the weight, so much harder to keep it off. But after gaining back 50 of the 105 I had lost, I’m back down. Only 10 pounds to get where I was. The. Struggle. Is. Real. But I’m a fighter. And I feel really good. Don’t ever give up on yourself. You’re worth the fight!❤️My day did not really go as planned, so I did some stress baking. Showing love with fresh apple cinnamon scones.
