I most often have a fruit salad with Greek yoghurt for lunch and at supper with whatever protein .....I have a tray of roasted veggies....or a salad with aded veggies to the romaine lettuce...or a stir fry with loads of veggies added.See this image largerMy roasted veggie pans from last night's supper....butternut squash in front.. ..from left to right in back pan.... Brussel sprouts...carrots...asperagus and french beans mixed together....also had some boiled turnip my hubby made ( he had most of the butternut squash ...I just took a serving out ) But all the rest were mine with my fish! Made burgers bulky with chopped carrot/celery/red onion/spring onion before cooking them.
