    Whisk the egg, oil, vanilla, syrup in a bowl and everything else except carrots in a separate bowl.Mix flour mixture into oil mix, then stir in carrots.CHILL for 30mins!(important)bake at 325 14 mins-let sit 15mins on rack to cool/cook center through

    1 cup instant oats, 3/4 cup whole wheat flour, 1 1/2tsp baking powder, 1 1/2tsp cinnamon, 1/8 tsp salt, 2 tbsp coconut oil, 1 egg(room temperature)1tsp vanilla extract, 1/2 organic syrup, 3/4 cup shredded carrots.

    Thanks for the suggestion on the energy bites! I will have to make those this week. I made clean eating carrot oat cookies yesterday at 90 calls a piece and even my 5&9yr old cousins loved them!Do you know if the nutrition info is somewhere to track?
