7 Super Soups

As the weather turns cold, heat up your meal planning with cozy soup recipes.  Soup doesn't need to be boring, plain or unsubstantial. Add ingredients like beans, lean proteins and whole grains to turn it into a complete nutritious meal. Avoid high sodium broths. Instead use spices and seasonings to add flavor. Double the recipe and use the left over's for tomorrow's lunch or freeze it to enjoy another night. Curl up with a cup of soup this week by using these recipes and resources. 

Slow Cooker Cream of Chicken and Rice Soup

Ditch the condensed "cream of whatever" soups and make this instead. You only need 10 minutes of hands-on cooking time for a filling yet light bowl of comforting soup.

Slow Cooker Northern Bean and Spinach Soup

Chef Meg's Vegetable Beef Soup

Prepare Chef Meg's Beef Roast recipe and use 12 ounces (four servings) of the leftover meat to make this quick, hearty, healthy soup.

Chef Meg's Tomato Soup

This tomato soup is so rich and thick you'll swear it's laden with cream and butter. Nope! The trick to this recipe is really good tomatoes. Don't try to use mealy, pale supermarket tomatoes. The soup will be bland.

Thai Chicken Coconut Soup (Chef Meg's Makeover)

This sweet and spicy soup is a staple of Thai takeout. Chef Meg recreated it for a fraction of the cost and sodium!

Creamy Cauliflower Soup

Perfect for lunch or a light dinner. This cauliflower soup is easy to prepare and is very healthy for you.

I use a basic light creamed soup recipe (like the cauliflower one above) and turn it into a cream of anything soup. What ever vegetables I have on hand. Today I will be making cream of celery (and tossing in leftover rotisserie chicken too). Report

Soups look good but I always want to eat crackers or cheese on them and that's no good. Report
I made the chicken and rice soup a few weeks ago, it was good! I left out the mushrooms though because I don't like them, I used extra carrots in it instead. Report

I need those recipes and all the help i can get to loose the pounds i am now determened to get rid of! How i understand now is the more protein the better well at least the amount the body needs not more of course. I have been overweight far to long! Report
I have a bag of that ham and beans mix in the cabinet right now, will have to make some, need some ham or ham hocks first. My husband is not satisfied with soup as a main meal, except or a beef stew. Otherwise he gets a small serving of Progresso Light with his lunch sandwich. But he isn't thrilled about it, herbs and spices do not turn him on, no matter what the health pundits say. Report
I used to make a very thick soup with ham and this 21 bean soup mix that they used have at Save on Foods and split peas and pasta - it probably was NOT Sparkpeople fare (unless you had a thimbleful) but it was good. Report
